Description

Rice Ada Payasam prepared with matta rice ada is common sweet delicacy prepared in almost all Kerala households. There are many variations of it, however, this easy south Indian Kerala food recipe uses only basic ingredients like Matta Rice Ada, milk, sugar and ghee to make best palada payasam. Our Whole grain matta rice ada give the payasam the natural color.

Our Matta Rice Ada is made from Kerala Matta rice (Rosematta rice, Palakkadan Matta rice, Kerala Red rice ) (Malayalam: കേരള മട്ട) an indigenous variety of rice grown in our farms at Palakkad District of Kerala.

Recipe:

Ingredients needed

Matta Rice Ada -1 cup
Milk -9 cups
Sugar -3 cups
Cardamom powder-1/4 tsp (optional)
Cashew nuts – 4(optional)
Raisins – 5-6 (optional)
Ghee-1 tablespoon
Condensed Milk – 1 tablespoon

 

Preparation
Soak Matta Rice ada in boiling water for 30 minutes.Wash the soaked ada in cold water 2-3 times. This is done to prevent the ada from sticking together. Drain the water completely and keep it aside.

Method
Boil 1 cup ada with 4 cups milk in pressure cooker for 4 whistles / steams. Add 5 cups milk, sugar and cook in low flame closing the lid for 15 minutes (make sure the volume don’t exceed half the cooker). The payasam changes to pale red color. Add condensed milk and ghee and stir well. Payasam is ready.

Heat a tsp of ghee, fry cashew nuts and raisins separately. Mix cardamom powder and switch off the flame. Add it to the payasam. This is optional. You can add if you prefer as it is not added traditionally.

Delicious Palada Payasam is ready. Serve hot or chilled
