Kerala Matta rice (Rosematta rice, Palakkadan Matta rice, Kerala Red rice or Red parboiled rice) (Malayalam: കേരള മട്ട) is an indigenous variety of rice grown in Palakkad District of Kerala. It is used on a regular basis for idlies, appams and plain rice. The robust, earthy flavor of Red Matta makes it an enticing companion to chicken, lamb, beef meats. We ensure the barn is intact with the rice and is not lost in the milling process.
When cooked,the natural red color in the bran or hull of the rice, leaches out and dyes the rest of the dish red to pink. Matta rice is high in fiber because of the bran and the flavor is much stronger than that of hulled rice, tasting more nutty and full. This can be served with a variety of foods in addition to being eaten on its own, and it can be incorporated into other mixed rice dishes as well.
