Kerala Matta rice (Rosematta rice, Palakkadan Matta rice, Kerala Red rice or Red parboiled rice) (Malayalam: കേരള മട്ട) is an indigenous variety of rice grown in Palakkad District of Kerala.
When cooked, the natural red color in the bran or hull of the rice, leaches out and dyes the rest of the dish red to pink. This rice is high in fiber because of the bran and the flavor is much stronger than that of hulled rice, tasting more nutty and full. This can be served with a variety of foods in addition to being eaten on its own, and it can be incorporated into other mixed rice dishes as well. It has a soft texture and does not become sticky when cooked.
Grain length and color may vary with the season and may differ with the batch processed and shipped.
